Stuffed strawberries with chocolate and ricotta
Yummmy….it’s look so delicious
This would make a wonderful Valentine’s Day dessert, because let’s face it no one wants to have a decadent heavy calorie-laden sugar bomb before retiring to, ahem, watch TV.
- 1 pint strawberries
- 8 ounces ricotta
- zest from half an orange
- 1/2 tsp almond extract
- 1-2 ounces dark chocolate
- 2 tbsp honey
- 1 tbsp powdered sugar
- 4 amaretti cookies (optional)
In a large bowl, whisk ricotta cheese, orange zest, sugar, honey and extract until incorporated. Using a Microplane or zester grate chocolate into bowl. Stir to mix well.
Cut a thin slice from the bottom of each strawberry, so they stand upright. Place berries, cut side down, on a serving platter. In a cross pattern, cut the berries almost into four wedges. Cut almost to, but not all the way to the bottom. Fan wedges slightly. Use a teaspoon or pastry bag to fill the strawberries with the cheese…
